Ingredients
 

  • 1 oz Light White Rum
  • 1 oz Calvados - Apple Brandy or Applejack
  • ½ oz Sweet Vermouth
  • Ice cubes
  • Dehydrated apple slice - for garnish, optional

Equipment

  • Coupe Glass
  • Mixing Glass
  • Measuring Jigger
  • Stirrer or Bar Spoon

Instructions

  • Prep Glass: Chill your Coupe Glass.
  • Add Vermouth: Add ½ oz Sweet Vermouth to the shaker.
  • Add Calvados: Measure and pour 1 oz Calvados, Apple Brandy, or Applejack into the glass.
  • Add Rum: Pour 1 oz Light White Rum into the mixing glass.
  • Add Ice: Fill your mixing glass with ice.
  • Stir Gently: Use a bar spoon to stir the ingredients gently.
  • Strain: Strain your mixture into your chilled glass.
  • Garnish: Place a dehydrated apple slice on top for garnish.

Notes

Substitutes:

  • Light White Rum: If you don't have Light White Rum, you can use any rum available.
  • Calvados/Apple Brandy/Applejack: Regular brandy works in a pinch if you can't find these. It changes the character slightly but still tastes great.
  • Sweet Vermouth: If you can't find Sweet Vermouth, try with Port Wine or even with Dry Vermouth for a less sweet mix.

Making a Pitcher of Kicker Cocktail:

  • Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 8 oz of Light White Rum, 8 oz of Calvados or Apple Brandy, and 4 oz of Sweet
  • Mix: In a large pitcher, combine the Light White Rum, Calvados or Apple Brandy, and Vermouth with ice. Stir well.
  • Serve: Strain the mixture into chilled coupe glasses. garnish with a dehydrated apple slice and serve immediately.

Making it Non-Alcoholic:

  • Rum Substitute: Use a non-alcoholic rum substitute; these are available and mimic rum's flavor quite well.
  • Calvados Substitute: Opt for apple juice with a splash of lemon juice and vinegar to add acidity and complexity.
  • Vermouth Substitute: To replicate the vermouth's depth, use non-alcoholic red wine or grape juice with a touch of non-alcoholic
  • Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version.
