Ingredients
 

  • 2 oz Gin
  • ¼ oz Absinthe or Pastis
  • ¾ oz fresh lime juice
  • ½ oz simple syrup
  • 5-7 fresh mint leaves
  • Ice cubes
  • Mint sprig and/or lime zest twist - for garnish, optional

Equipment

  • Cocktail Shaker
  • Cocktail Strainer
  • Fine strainer
  • Measuring Jigger
  • Coupe Glass

Instructions

  • Prep Glass: Fill a Coupe glass with ice. Give it a stir to chill it and set it aside.
  • Prep Shaker: Place 5-7 fresh mint leaves into your cocktail shaker.
  • Add Simple Syrup: Pour in ½ oz simple syrup over the mint leaves.
  • Add Lime Juice: Add ¾ oz fresh lime juice.
  • Add Absinthe: Measure and pour ¼ oz Absinthe or Pastis into the shaker as well.
  • Add Gin: Add 2 oz Gin.
  • Shake: Fill the shaker with ice, close it and give it a good shake (10-15 seconds).
  • Strain: Discard the ice inside the coupe glass. Then, using both the cocktail strainer and the fine strainer, strain the shaken drink into the chilled glass.
  • Garnish: Garnish with a lime zest twist and/or a mint sprig and serve immediately.

Notes

Substitutes:

  • Gin: If you don't have Gin, vodka can be a good substitute, although it will lack the botanical flavor that Gin provides. You can also use Genever as a substitute for a twist on this classic cocktail.
  • Absinthe: Any kind of absinthe, pastis or other anise-flavored liqueur can be used to make this cocktail.  Remember that these substitutes may not have the same strength as absinthe, so adjust to taste.
  • Fresh Lime Juice: In a pinch, bottled lime juice can work, but fresh is always best. Fresh lemon juice can also be used as an alternative for this cocktail. It won’t have the same distinctive crisp flavor as lime juice but will still make for a delicious cocktail.
  • Simple Syrup: If you're out of simple syrup, you can make your own by dissolving equal parts sugar and water over low heat. Alternatively, agave nectar or honey syrup (2 parts honey to 1 part warm water) can be used, but these will slightly alter the flavor.

Making a Pitcher of French Pearl:

  • Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of Gin, 2 oz of absinthe, 6 oz of fresh lime juice, 4 oz of simple syrup and 40-56 fresh mint leaves (approx. 4 handfuls).
  • Mix: Smack the mint leaves between your hands a few times and drop them in a large pitcher. Muddle gently, being careful not to tear the leaves into small pieces. Then, add the Gin, absinthe, lime juice, and simple syrup and let it rest for 10 minutes for the mint leaves to infuse. Add ice and stir well.
  • Serve: Strain to remove the ice, serve immediately into chilled coupe glasses and garnish with mint sprigs or lime peels. If you have some leftovers, be sure to keep it in the fridge (make sure no ice cubes are left inside) in an airtight container.

Making it Non-Alcoholic:

  • Gin Substitute: Use a non-alcoholic gin substitute; several on the market do a good job mimicking the botanical flavors of Gin.
  • Absinthe Substitute: Opt for a non-alcoholic anise extract or omit the simple syrup and replace it with an anise-flavored syrup.
  • Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients and follow the original steps to enjoy a non-alcoholic version.

Making it Vegan:

The French Pearl cocktail is naturally vegan as it contains no animal products. However, some brands may use animal products in their production process, especially if a filtration process is involved. Always check the brand's website or contact them directly to ensure their products are vegan.
