Ingredients
 

  • oz Silver Tequila
  • oz Blue Curaçao
  • ½ oz pineapple juice
  • Ice cubes
  • Maraschino cherry - for garnish, optional

Equipment

  • Fine strainer
  • Measuring Jigger

Instructions

  • Prep Glass: Fill a Martini glass with ice. Give it a quick stir and set it aside.
  • Add Pineapple Juice: Pour ½ oz pineapple juice into the shaker.
  • Add Blue Curaçao: Add ⅔ oz Blue Curaçao.
  • Add Tequila: Finally, add 1½ oz Silver Tequila to the mix.
  • Shake Well: Fill the shaker with ice, close it and give it a good shake (10-15 seconds).
  • Strain: Take the Martini glass and discard the ice. Then, using the cocktail strainer and the fine strainer, strain the shaken drink into the chilled glass.
  • Garnish: Garnish with a maraschino cherry and serve immediately.

Notes

Substitutes:

  • Tequila: If you're out of tequila, you can use gin as a substitute. It will give the cocktail a more botanical flavor, which some might prefer. As a rather neutral spirit, vodka is also a great option for those who like a more fruity drink.
  • Blue Curaçao: If you don't have blue Curaçao, you can use triple sec or another orange liqueur instead. Just be aware that this will change the color of the drink.

Making a Pitcher of Envy Cocktail:

  • Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 12 oz of tequila, 5 oz of blue curaçao, and 4 oz of pineapple juice.
  • Mix: Combine the tequila, blue curacao, and pineapple juice in a large pitcher. Add ice and stir well.
  • Serve: Pour the mixture into chilled Martini glasses, garnish with a Maraschino cherry, and serve immediately.

Making it Non-Alcoholic:

  • Tequila Substitute: Use a non-alcoholic tequila substitute; several brands are available that mimic the flavor of tequila without the alcohol. Use a non-alcoholic tequila substitute; several brands are available that mimic Tequila's flavor quite well. Otherwise, you can use fresh orange juice as a substitute. You can also try making your own substitute by mixing together water, a pinch of smoked salt, a splash of tonic and a bit of agave syrup (to taste).
  • Blue Curaçao Substitute: You can use a non-alcoholic blue curaçao syrup or make your own by combining simple syrup, orange flavoring and blue food coloring. A more natural (yet longer) way of making it would be to infuse simple syrup with orange peels for 2-3 days (keep the mix in the fridge at all times) and then filter it before adding a few drops of food coloring.
  • Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version.

Making it Vegan:

Most of the ingredients in this cocktail are naturally vegan. However, some brands of blue curaçao use artificial colors that may not be vegan-friendly, and the same goes for maraschino cherries which are sometimes colored with cochineal.  Instead of using a cherry, you can use a fresh or dried pineapple slice for garnish for a safer option.
