- 2 oz White Rum
- 1 oz coconut cream
- 6 fresh mint leaves
- 1 oz lime juice
- 1 tsp sugar
- Soda water - to top off
- Ice cubes or crushed ice
- Lime slice and mint sprig - for garnish, optional

Muddle Mint and Sugar: Add 1 tsp sugar and 6 fresh mint leaves to the glass. Using a muddler, press gently to release the mint's aroma. Avoid tearing the leaves.
Add Lime juice: Pour 1 oz lime juice into the glass.
Add Coconut cream: Pour in 1 oz coconut cream for that tropical flavor.
Add Rum: Pour 2 oz White Rum into the glass.
Add Ice: Fill your highball glass with either ice cubes or crushed ice.
Stir: Mix all the ingredients using a bar spoon.
Top with Soda: Fill the rest of the glass with Soda water.
Garnish: Add some ice if needed and adorn with a slice of lime and a sprig of mint.
Substitutes:
- White Rum: I've sometimes switched out white rum for spiced rum when I'm in the mood for a spicier twist. And if you're looking for a smokier flavor, try using mezcal.
- Coconut Cream: Coconut milk also works if you want a lighter consistency. For an intense coconut flavor, you could try coconut liqueur.
- Lime Juice: In case of emergencies, lemon juice can step in. The flavor will be slightly different but still delicious.
Making a Pitcher of Coconut Mojito:
- Scale: For a pitcher that serves 8, multiply all the ingredients by 8. You'll need 16 oz of rum, 8 oz of coconut cream, 48 mint leaves, and 8 oz of lime juice.
- Mix: In a large pitcher, combine the rum, coconut cream, muddled mint leaves, and lime juice. Stir well.
- Serve: Pour into individual ice-filled Highball glasses, top with soda water, garnish as desired, and serve immediately.
Making it Non-Alcoholic:
- Rum Substitute: Use a non-alcoholic rum substitute or simply increase the amount of coconut cream and soda water.
- Proceed As Usual: With the non-alcoholic substitute, follow the above-mentioned steps and enjoy a refreshing, alcohol-free Coconut Mojito.
Making it Vegan:
The standard Coconut Mojito recipe is already vegan-friendly. Ensure the sugar you use is vegan (not processed using bone char) and the coconut cream/milk brand has no non-vegan additives. Cheers to compassionate choices!
