Ingredients
 

  • oz Gin
  • ½ oz fresh lemon juice
  • ½ oz raspberry syrup
  • 1 fresh egg white
  • Fresh raspberries - for garnish, optional

Equipment

  • Cocktail Shaker
  • Fine Mesh Strainer
  • Measuring Jigger
  • Coupe Glass

Instructions

  • Chill Glass: Place your coupe glass in the freezer or fill it with ice to chill.
  • Combine Ingredients: In the cocktail shaker, add ½ oz fresh lemon juice, 1 fresh egg white, ½ oz raspberry syrup, and 1½ oz Gin.
  • Add Ice: Fill the shaker with ice and shake vigorously until well-chilled.
  • Strain: Fine strain the cocktail into the chilled coupe glass using a fine mesh strainer.
  • Garnish: Place a few fresh raspberries on top for garnish.

Notes

Substitutes:

  • Gin: I sometimes use vodka if I ever run out of gin. It gives a different character to the drink but works nicely with the raspberry and lemon. A gin with pronounced botanicals like a rose can be a delightful choice for a more floral twist.
  • Raspberry Syrup: In a pinch, I've used grenadine. While it doesn't have the same raspberry flavor, it provides the needed sweetness. If you're aiming for the raspberry flavor, muddling fresh raspberries and adding a touch of simple syrup can also do the trick.
  • Egg White: Aquafaba (chickpea water) is a great vegan substitute. It creates the same frothy texture as egg white without using any animal products.

Making a Pitcher of Clover Club:

  • Scale: To serve 8, multiply all ingredients by 8. This results in 12 oz of gin, 4 oz of lemon juice, 4 oz of raspberry syrup, and 8 egg whites.
  • Mix: In a large pitcher, combine gin, lemon juice, raspberry syrup, and egg whites. Stir them well.
  • Serve: For each serving, shake the mixture with ice, fine strain into chilled coupe glasses, garnish with raspberries, and serve immediately.

Making it Non-Alcoholic:

  • Gin Substitute: Use a non-alcoholic gin substitute, which does a commendable job recreating the flavor of gin.
  • Proceed As Usual: Substitute the gin with the non-alcoholic version and follow the rest. Enjoy a refreshing, non-alcoholic Clover Club.

Making it Vegan:

  • Egg White Substitute: Aquafaba, the liquid from a can of chickpeas, works wonders here. Use roughly 1 oz (30 ml) instead of the egg white. It gives the drink that creamy texture without using animal products. Ensure you shake it well to get that frothy top.
