Ingredients

  • 2 oz Campari
  • 4 oz fresh grapefruit juice
  • Ice cubes
  • Grapefruit slice or twist - for garnish, optional

Equipment

  • Highball Glass
  • Measuring Jigger
  • Stirrer or Bar Spoon

Instructions

  • Prep Glass: Fill your highball glass with ice cubes.
  • Add Campari: Pour 2 oz Campari over the ice.
  • Add Grapefruit Juice: Fill the glass with approx. 4 oz fresh grapefruit juice.
  • Stir Gently: Use a bar spoon to stir the ingredients gently.
  • Garnish: Place a grapefruit slice or twist into the glass for garnish.

Notes

Substitutes:

  • Campari: If you want a less bitter profile, I recommend using Aperol as a substitute. It's lighter but still maintains that citrus essence.
  • Grapefruit Juice: In case you run out of fresh grapefruit juice, bottled juice works too. Just ensure it's unsweetened to keep the drink balanced.

Making a Pitcher of Campari and Grapefruit:

  • Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of Campari and 32 oz of grapefruit juice.
  • Mix: In a large pitcher, combine the Campari and grapefruit juice. Stir well.
  • Serve: Pour the mixture into individual ice-filled highball glasses, garnish with a grapefruit slice or twist, and serve immediately.

Making it Non-Alcoholic:

  • Campari Substitute: Use a non-alcoholic aperitif or create a simple syrup infused with orange peel and a touch of gentian roots for bitterness.
  • Proceed As Usual: Replace Campari with your non-alcoholic substitute, follow the original steps, and enjoy a non-alcoholic version.
