Ingredients
 

  • 2 oz Oude Genever
  • 1 oz Butterscotch or Stroopwafel liqueur
  • 1 oz sweet vermouth
  • Ice cubes
  • Lemon twist - for garnish, optional

Equipment

  • Martini or Coupe Glass
  • Mixing Glass
  • Cocktail Strainer
  • Measuring Jigger
  • Stirrer or Bar Spoon

Instructions

  • Prep Glass: Fill a Coupe or Martini glass with ice. Give it a quick stir and set it aside.
  • Add Vermouth: Pour 1 oz sweet vermouth into the mixing glass.
  • Add Butterscotch liqueur: Measure and pour 1 oz Butterscotch or Stroopwafel liqueur into the mixing glass as well.
  • Add Genever: Add 2 oz Oude Genever to the mix.
  • Add Ice and Stir: Fill the mixing glass with ice. Using a bar spoon or a long stirrer, stir well (for about 15-20 seconds). Give it a taste and stir a bit more if you feel like more dilution is necessary.
  • Strain: Take the martini or coupe glass and discard the ice inside. Using the cocktail strainer, strain the mixture into the chilled glass.
  • Garnish: Garnish by placing a lemon zest twist on the rim of the glass. Serve immediately.

Notes

Substitutes:

  • Oude Genever: If you don't have Oude Genever, you can use any other genever, such as a “jonge” one. The end result will be slightly crispier and more botanical, but it will still make for a delicious cocktail. You can also use a light gin as an alternative if you can’t find any genever, but this too will alter the overall taste of the cocktail.
  • Butterscotch or Stroopwafel liqueur: If you can’t find any Stroopwafel liqueur, you can use a toffee or caramel liqueur with an added dash of cinnamon syrup or liqueur as a substitute.
  • Sweet Vermouth: Any kind of red vermouth can be used for this recipe. You could also try a fortified wine like port or sherry (Oloroso, Palo Cortado, or Pedro Ximenez for example) for a different flavor profile.

Making a Pitcher of Buttercup Cocktail:

  • Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of Oude Genever, 8 oz of Butterscotch or Stroopwafel liqueur, and 8 oz of sweet
  • Mix: Combine the Genever, Butterscotch, or Stroopwafel liqueur, and vermouth in a large pitcher. Add ice and stir well. Give it a taste and stir a bit more if you feel like more dilution is necessary. Strain to remove the ice and transfer it into a bottle.
  • Serve: Pour the mixture into chilled coupe glasses, garnish each drink with a lemon zest twist, and serve immediately. Be sure to put the bottle back into the fridge between each serving: this cocktail should always be served as cold as possible. If you have any leftovers, you can keep the bottle in the fridge for up to three months.

The Buttercup Cocktail is usually a vegan-friendly recipe; just make sure to check that the butterscotch or stroopwafel liqueur you’re using is certified vegan.
