Prep Glass: Chill your martini glass with some ice cubes.
Add Absinthe or Pastis: Add 1 bar spoon Absinthe or Pastis to a shaker
Add Lemon Juice: Pour ¾ oz fresh lemon juice into the shaker.
Add White Crème de Cacao: Measure and pour ¾ oz White Crème de Cacao into the shaker as well.
Add Tequila: Finally, add 2 oz Blanco Tequila to the mix.
Shake Well: Fill the shaker with ice, close it, and give it a good shake (10-15 seconds).
Strain & Serve: Take the Coupe or Martini glass and discard the ice inside. Then, use both the cocktail strainer and the fine strainer to pour the shaken drink into the chilled glass. Serve immediately.
Substitutes:
- Absinthe Or Pastis: If neither of the two is available opt for Green Chartreuse for a different but still delicious mix
- Tequila: If you don't have tequila, you can use vodka for a different but enjoyable flavor. I've also tried using rum, which adds a sweeter note to the cocktail.
- White Crème de Cacao: If you can't find white crème de cacao, use a white chocolate liqueur like Mozart, though it will change slightly. For a non-alcoholic option, use white chocolate syrup.
- Lemon Juice: Fresh lemon juice is best, but bottled lemon juice can work in a pinch. Lime juice offers a tangier alternative if you're out of lemons.
Making a Pitcher of 21st Century Cocktail:
- Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 8 bar spoons of pastis or absinthe, 16oz of tequila, 6 oz of white crème de cacao, and 6 oz of lemon juice.
- Mix: In a large pitcher, combine the absinthe, the tequila, white crème de cacao, and lemon juice with ice. Stir well.
- Serve: Strain the mixture into chilled martini glasses, and serve immediately.
Making it Non-Alcoholic:
- Tequila Substitute: Use a non-alcoholic tequila substitute; these are available and do a good job mimicking tequila's flavor profile.
- Crème de Cacao Substitute: Opt for white chocolate syrup instead of white crème de cacao.
- Proceed As Usual: Omit the absinthe and use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version.
Making it Vegan:
- Check Ingredients: The ingredients in this cocktail should be vegan-friendly but always check the label of the specific brands you are using.
